Braised red cabbage with apples

Sweet and tangy braised red cabbage with apple, raisins, and vinegar, slowly cooked until tender and flavorful. A perfect make-ahead side dish for roasts or festive meals.

Preparation
Step 1
Melt the butter in a stainless steel or flameproof casserole dish over a medium heat.
Step 2
Add the finely sliced onion and fry gently for about 3 minutes. Stir in the sliced apple and cabbage, cooking for around 5 minutes, until beginning to soften. Mix in the raisins and vinegar.
Step 3
Cover the pan with a lid and cook for 1 hour, or until the vegetables are just tender. Season with salt and freshly ground black pepper, then replace the lid and continue cooking until the cabbage is fully tender and any remaining liquid has evaporated.
Step 4
This dish can be made ahead and will keep, covered, in the fridge for several days. Reheat gently before serving.
