Braised Potatoes with Tomatoes and Meat

Preparation
Step 1
Choose any meat you like; cooking time varies. Chicken cooks faster than beef. For this recipe, I used pork. Tomatoes can be regular, cherry, canned, or replaced with tomato paste.

Rinse and pat dry the meat. Cut pork into small, uniform pieces.
Step 3
Peel and wash potatoes, onion, and carrot.
Step 4
Use a heavy-bottomed pan, thick pot, or dutch oven. Heat a small amount of vegetable oil on high. Add pork and brown it, stirring frequently. Add a bit of water to partially cover the meat. Simmer on low for 20-30 minutes.
Step 5
Cut carrots into thin sticks or grate coarsely. Chop onion. Add vegetables to the meat.
Step 6
Dice potatoes and slice or crush tomatoes into chunks or puree. Add potatoes and tomatoes to the pot.
Step 7
Season with salt, pepper, and spices. Add enough water to almost cover the potatoes. Stir, bring to a boil, then reduce heat to medium and simmer 20-30 minutes until potatoes are cooked.
Step 8
Five minutes before finishing, take 1-2 ladles of broth, cool slightly, mix with flour to avoid lumps. If there’s little broth, use warm water.
Step 9
Pour the flour mixture back into the pot, stir well, add a bay leaf, bring to a boil, then remove from heat.
Step 10
Let the dish rest for a while. Serve with freshly chopped herbs.
