Braised Cabbage with Prunes
Fragrant, juicy, and absolutely delicious, perfect for a light dinner! Braised cabbage with prunes is a lean side dish that will wonderfully diversify your menu both during fasting periods and on other days. Thanks to the dried fruit, the cabbage gains sweet notes and pairs especially well with poultry dishes.

Step 1
How do you braise cabbage with prunes? Prepare all the necessary ingredients for the dish. You can use either young cabbage or cabbage from an older harvest. Young cabbage is, of course, preferable, because the dish will turn out more tender and juicy. But older cabbage will also be tasty, it will just need to be braised a little longer.
Step 2
Wash the cabbage and shred it thinly, avoiding the dense parts of the leaves near the core. The weight of the shredded cabbage should be about 1 kg, so buy a head with some extra.
Step 3
Wash the prunes. At the end, you can place them in a sieve and pour boiling water over them to wash off any remaining dirt. Cut large prunes in half. Smaller ones can be left whole.
Step 4
Heat the vegetable oil in a deep frying pan. Add the cabbage, salt it, and pour in 100 ml water.
Step 5
Mix everything well, cover the pan with a lid, and braise over medium heat, stirring from time to time, for about 10 minutes. If the cabbage is young, as in this recipe, it will need a little less time. The excess moisture should evaporate from the cabbage, and it should reduce in volume.
Step 6
When that happens, add the tomato paste and sugar to the pan. Braise the dish, stirring, for another 4 minutes. In this recipe, the tomato paste can be replaced with ketchup.
Step 7
Add the prunes, coriander, allspice, and ground pepper. Pour in the remaining water and the lemon juice. Mix everything and braise together, stirring, until almost all the liquid has evaporated. Sugar and lemon juice balance the overall flavor of the dish very well. If you are not sure you will like the finished taste, then it is better not to add the sugar and juice.

Remove the pan from the heat, cover it with a lid, and let the cabbage stand for 10 minutes.
