Braised Cabbage with Potatoes and Sausages

Step 1
How to braise cabbage with potatoes and sausages? Prepare all the necessary ingredients. Wash the vegetables; peel the potatoes, carrot, and onion. Rinse the peeled vegetables with water and pat dry.

Peel the sausages and slice into rounds about 1/4 inch (0.5 cm) thick. Pour 2 Tbsp refined oil into a skillet and heat over medium heat. Add the sliced sausages and fry until golden. Transfer to a plate and cover to keep warm.
Step 3
Finely chop the onion and add it to the skillet where the sausages were fried.
Step 4
Grate the carrot on a coarse grater and add to the skillet with the onion. You can also cut the carrot into matchsticks or small cubes, or use a Korean-style grater if you prefer a firmer texture.

Sauté the vegetables, stirring, over medium heat for 5-7 minutes, until they soften.
Step 6
How to cook potatoes and cabbage with sausage? Dice the potatoes into medium cubes and add to the skillet. If you like, cut the potatoes into thick matchsticks or wedges.

Thinly shred the cabbage and add it to the skillet with the other vegetables. If the cabbage is tough (often winter cabbage), lightly massage it with your hands so it cooks faster.

Add the remaining oil, stir, and cover the skillet with a lid. Braise on low heat for 20 minutes, stirring occasionally. If there isn’t enough liquid and the cabbage, potatoes, and sausages might scorch, add 2-3 Tbsp water.

Then season the vegetables with salt and pepper; if you like, add herbs and your favorite spices.

Add tomato sauce to the skillet. You can replace it with ketchup or tomato paste diluted to the consistency of thick juice.

Return the sausages to the skillet and mix everything well.
Step 12
Braise the potatoes with cabbage and sausages for another 5-10 minutes to your preferred taste. Remove from the heat, portion out, and serve right away.
