Braised Cabbage with Mushrooms in a Skillet

This accessible recipe uses simple ingredients! Braised cabbage with mushrooms in a skillet is very easy to cook, suitable for any beginner cook. Use store-bought mushrooms or wild ones you collected yourself.

Step 1
Which mushrooms are best? Usually, I use honey mushrooms or oyster mushrooms. Porcini, chanterelles, Boletus, and many others also go well with cabbage. Store-bought mushrooms work too.
Step 2
Clean mushrooms from forest debris and wash thoroughly. For mature honey mushrooms, remove the stems and leave only caps. Young mushrooms can be cooked whole. Cut large caps in half or quarters. Place honey mushrooms in a pot, cover with cold water, and bring to a boil. When boiling, white foam will form - skim it off with a spoon. Reduce heat and simmer 20-25 minutes.

Meanwhile, remove outer leaves from the cabbage, rinse under cold running water, and shred thinly.
Step 4
In a skillet with high sides, heat half of the vegetable oil. Add cabbage and sauté, stirring, about 15 minutes.
Step 5
Drain boiled honey mushrooms. In a second skillet, heat remaining oil and fry mushrooms about 10 minutes, stirring occasionally to avoid burning.
Step 6
Add onion, sliced in half or quarter rings, and fry together another 5 minutes. Lightly season with salt.
Step 7
Add tomato paste, ground pepper, and salt to the cabbage. Add 2-3 tablespoons of water and mix.
Step 8
Add bay leaf and simmer on low heat, covered, 5-7 minutes.
Step 9
Add cooked honey mushrooms to the skillet with cabbage.
Step 10
Mix all ingredients, taste, and adjust salt and pepper if needed. You can add favorite spices at this stage, though I usually only use salt and pepper. Cover and cook another 3-4 minutes.
Step 11
Garnish with fresh herbs before serving.
