Boiled Pork Knuckle

Preparation
Step 1
The pork knuckle can be slightly smaller or larger - size doesn’t matter much. Rinse it thoroughly and remove any remaining bristles or hair if present. Rinse again under running water.
Step 2
Peel the onion, carrot, and garlic. Wash the vegetables and bay leaf.
Step 3
Place the pork knuckle into a large pot and pour in enough water to completely cover the meat.
Step 4
Bring to a boil over high heat. Add the onion, carrot, bay leaves, and black peppercorns. Once the water starts boiling, foam will form on top - remove it with a large spoon (if not, the broth will become cloudy). Salt to taste. Reduce heat to low, cover with a lid, and simmer for 2-3 hours, until the meat is tender.
Step 5
Carefully remove the cooked knuckle from the pot and place it on a flat plate or tray to cool slightly. The remaining broth can be saved for making a rich soup or borscht.
Step 6
Using a sharp knife, cut the knuckle lengthwise to the bone and remove the bone.
Step 7
Crush a few black peppercorns in a mortar – freshly crushed pepper adds great aroma and flavor. You can also use a ready-made mix of ground peppers.
Step 8
Lightly salt and pepper the meat, then add garlic pressed through a garlic press. Rub the seasoning evenly over the surface.
Step 9
Gently roll the knuckle into a roulade.
Step 10
Tie it securely with kitchen string.
Step 11
Wrap it in plastic wrap or a small plastic bag and place in a container.
Step 12
Put a weight on top - for example, a clean small stone or heavy object. Leave it overnight in a cool place (preferably in the refrigerator).
Step 13
In the morning, the pork knuckle is ready! Slice thinly and serve. Enjoy!
