Boiled Carrot Patties, Kindergarten-Style

Step 1
How to make carrot patties from boiled carrots? Prepare the necessary ingredients. Choose juicy, fresh carrots (not limp). Use a large egg.

Rinse the carrots well, peel them, and grate on a coarse grater. The cleaned weight of carrots should be 500 g (about 17.6 oz), so buy a bit extra.
Step 3
Put the carrots into a saucepan or a thick-bottomed pot. Pour in the milk, add sugar, salt, and a piece of butter.
Step 4
Stir everything and simmer, stirring, over low heat under a lid until the carrots are soft and the moisture evaporates. It took me about 25 minutes. It’s important to check from time to time that the carrots aren’t burning on the bottom, so stir thoroughly, scraping the bottom, to see how much liquid is left and how much longer to cook.

In the end, all the liquid should evaporate.
Step 6
Transfer the cooked carrots to a bowl and cool to room temperature. If you see extra moisture left, you can gently squeeze it out.
Step 7
Add flour and semolina to the carrot mixture, then crack in the egg.

Mix thoroughly and let it stand for 20 minutes so the semolina swells. You should get a thick, slightly sticky mixture.
Step 9
Shape a medium patty from the carrot mixture and coat it on all sides in breadcrumbs. If the mixture sticks a lot and falls apart, moisten your hands with water.
Step 10
Shape the remaining patties the same way. I ended up with 6 pieces.

Heat a little vegetable oil in a frying pan, add the patties, and fry on both sides until a golden crust appears.
Step 12
Transfer the cooked patties to a plate and serve right away. I served them with a vanilla milk sauce - one of those grandma-style sauces often paired with baked casseroles, crepes, and curd fritters. Enjoy!
