Blueberry Buns in the Oven from Yeast Dough

Preparation
Step 1
Sift the flour ahead of time to enrich it with oxygen. Sifting helps the dough rise better and makes the baked goods fluffier. Warm the milk to about 97-104°F (36-40°C). Cold milk slows down yeast activity; hot milk can kill it. Rinse and dry the blueberries.
Step 2
To make the yeast dough, pour a little warm milk into a large bowl and add sugar and yeast. Stir and let sit for 5-10 minutes to activate the yeast.

Then pour in the rest of the warm milk. Add melted butter, eggs, sour cream, and salt. You may also add a bit of lemon or orange zest for aroma. Mix everything.
Step 4
Gradually add the sifted flour and knead the dough. Adjust the flour amount based on the dough consistency; you might need slightly more or less.
Step 5
Knead the nearly finished dough with oiled hands - it won’t stick and won’t absorb extra flour. Cover the soft, elastic dough with a towel and let it rise in a warm place for 1 hour.
Step 6
In warmth, the dough will rise quickly. Once it’s doubled or tripled in size, you can start shaping the buns.
Step 7
Pinch off a small piece of dough and flatten it into a disk. Sprinkle some starch over it, add blueberries, and a little sugar. Fold in half, pinch the edges, and shape into a bun.
Step 8
Preheat the oven to 356°F (180°C). Line a baking tray with parchment paper or a silicone mat. Place the buns on the tray and brush with egg yolk for browning. Let rest for 10-15 minutes, then bake for 20-25 minutes.
Step 9
The buns should turn golden. Remove from tray, cool slightly, and serve. Enjoy!
