Set two saucepans over medium heat. Pour the milk into one pan and melt the butter in the other. Stir the flour into the melted butter and cook for 3-4 minutes.

Gradually whisk the warm milk into the flour and butter mixture, stirring constantly. Continue whisking until the sauce becomes smooth and silky before adding more milk. This steady process prevents lumps from forming.
Step 3
Once all the milk has been incorporated, keep stirring and reduce the heat to the lowest setting. Cook for another 4 minutes, then crumble in the blue cheese. Stir continuously for 1 minute until the cheese has fully melted.
Step 4
Season with a touch of white pepper, noting that additional salt is unnecessary as the cheese already provides a salty flavor.
