Blinis

Preparation
Step 1
Make a thin paste by combining the yeast with 225g/8oz of the sifted flour and lukewarm milk. Leave the mixture to ferment for two hours in a warm environment.
Step 2
Once ready, add the remaining 115g/4oz of flour, the egg yolks, a pinch of salt, and the tepid milk, mixing gently to avoid developing too much structure. Fold in the whisked egg whites.
Step 3
Allow the batter to ferment for another 30 minutes. When ready to serve, cook the blinis quickly, just like pancakes, using small omelette pans. Serve them piled high and very hot on a napkin.
