Blended mushroom soup

Preparation
Step 1
Begin by sweating the chopped shallots in butter with a pinch of salt for about 3 minutes, making sure they don’t take on any colour. Add the mushrooms and continue to sweat gently for another 5 minutes.

Next, pour in the water and chicken stock. (For a vegetarian version, simply replace the chicken stock with more water.) Bring the mixture to a boil, then reduce the heat and let it simmer gently for 20 minutes.
Step 3
After the soup has simmered, transfer it to a blender and process until completely smooth. Return the blended soup to a saucepan and, using a hand blender, incorporate the remaining butter until fully emulsified. Adjust the seasoning to taste.
Step 4
Ladle the soup into bowls and serve warm.
