Blackberry and apple hand pies

Golden, flaky puff pastry parcels filled with tender apples, juicy blackberries, and a hint of liqueur, baked to perfection and served warm with creamy ice cream.

Preparation
Step 1
Cook the sliced apples with sugar and blackberry liqueur in a pan over medium heat for 5-6 minutes, until softened. Allow to cool, then stir in the blackberries.
Step 2
Preheat the oven to 180°C.
Step 3
Cut the dough into circles and spoon the fruit mixture, reserving any juices, onto one side of four puff pastry circles, leaving a 2 cm (1 in) border. Fold the dough and cover the berries. Press the side with fork to seal it.
Step 4
Brush all over with more beaten egg, and sprinkle with caster sugar. Bake for 20 minutes, or until golden and puffed.
