Black bean brownies

Rich, fudgy, and secretly healthy, these black bean brownies are packed with chocolate flavour and naturally sweetened. A gluten-free treat that’s easy to make and ready in under 30 minutes.

- tablespoon - 20 ml

Preparation
Step 1
Preheat the oven to 180C and line a 20cm/8in square baking tin with baking paper.
Step 2
In a food processor, blend the black beans with the vegetable spread until smooth. Add the eggs and blend briefly again until the mixture is fully combined, then transfer to a large mixing bowl.
Step 3
Stir in the cocoa powder, ground almonds, vanilla extract, maple syrup, coffee granules, sweetener, and half of the chocolate chips. Whisk everything together until the mixture is evenly blended.
Step 4
Pour the batter into the prepared tin and scatter the remaining chocolate chips over the top.
Step 5
Bake on the middle shelf of the oven for 18-20 minutes, or until just firm to the touch. Remove from the oven and allow to cool slightly before lifting the brownie out of the tin. Slice into squares and serve warm, optionally dusted with a little sifted cocoa for an extra chocolatey finish.
