Biscuits with jam
Delicate buttery biscuits baked until crisp, then sandwiched with sweet jam for a classic, melt-in-the-mouth treat.

Preparation
Step 1
Preheat the oven to 170C.
Step 2
Add the flour, butter, icing sugar and salt to a bowl and rub together with your fingertips until the mixture resembles breadcrumbs. Incorporate the egg yolks and mix until a dough forms. Turn the dough onto a lightly floured surface and roll to about 0.5cm/¼in thick before cutting out shapes with a 4cm/1½in cutter.
Step 3
Split the biscuits into two groups. Using a 2cm/1in fluted cutter, cut out the centre of half the biscuits and discard the cut-out pieces. Arrange all the biscuits on a baking tray.
Step 4
Bake for 10-12 minutes, or until lightly golden and crisp. Allow them to cool on a wire rack.
Step 5
Place a small spoonful of your favorite jam onto each whole biscuit and top with a biscuit that has a hole. You can use two different jams for cookies. Serve once set.
