Birch Bark “Birch Tree” Cookies

Step 1
How to make Birch Tree cookies? Prepare the ingredients for shortcrust pastry. Take the butter out in advance so it softens. Use premium wheat flour.
Step 2
Mix the flour with baking powder and sift into a wide bowl.
Step 3
In a convenient bowl, combine softened butter, sugar, and vanilla sugar.
Step 4
Mash and whisk with a fork or whisk until fluffy and smooth.
Step 5
Add half an egg, mix.
Step 6
Add the sifted flour with baking powder and mix.
Step 7
Quickly knead the shortcrust dough. It should be soft and pliable. If it sticks too much, add a little flour, but don’t overdo it or the dough will turn tough. Wrap the dough in plastic wrap and refrigerate for 1 hour. Chilling makes shaping easier and improves texture: the butter won’t melt and the cookies will turn crumbly, not dense.
Step 8
Divide the chilled dough into equal pieces. I got 12 pieces. Keep the pieces in the fridge so they don’t warm up; take them out one by one as you shape. Roll a piece into a finger-thick log and flatten slightly.
Step 9
Lightly roll it into a narrow rectangle 3-5 mm (about 1/8-3/16 in) thick, rounding the corners a bit. Shape the rest the same way.
Step 10
Carefully transfer the pieces to a baking sheet lined with parchment.
Step 11
Bake in a preheated oven at 200°C / 392°F for 8-10 minutes. Don’t overbake or the cookies will be hard. As soon as the edges start to brown, remove the tray. Cool the cookies completely.

For decoration, any dark chocolate works, but bittersweet/dark is best to balance sweetness.
Step 13
Separate the Oreo cookie halves from the filling. Crush the cookies into fine crumbs.
Step 14
Melt the chocolate in a double boiler: place broken chocolate in a cup set over a pot of simmering water and stir until fully melted. You can also melt it in the microwave.

Spread melted chocolate on each cookie, not reaching the edges. Let the chocolate set completely.

For the icing, sift powdered sugar through a fine sieve.

In a suitable bowl, lightly whisk the egg white.

Add powdered sugar and rub/whisk until combined.

Add lemon juice little by little, stirring constantly. Adjust thickness with lemon juice and powdered sugar: if too thick, add lemon juice; if too thin, add more powdered sugar.

Stir until the powdered sugar dissolves fully. The icing should be fluid enough to spread easily.

Cover the chocolate layer with icing. Reserve a little icing for later. Let the icing dry slightly.

Using a toothpick, randomly scrape off some icing in several spots to imitate birch bark pattern. Leave the cookies for a few minutes so the icing firms up a bit.

Use the reserved icing to add small raised “bumps” near the scraped spots. Immediately sprinkle them with Oreo crumbs. Shake off loose crumbs by turning the cookie pattern-side down. Let the icing dry completely.
Step 24
With the tip of a knife, make small crosswise marks on the cookies. Birch Tree cookies are ready.
