Preparation
Step 1
Prepare the necessary ingredients and spices. Bell peppers can be green, red, or yellow - your choice.
Step 2
Wash and cut 3 kg (6.6 lb) of tomatoes into chunks, removing the stems.
Step 3
Grind the prepared tomatoes through a meat grinder.
Step 4
Place the tomato mass into a large enameled pot.
Step 5
Add 1 kg (2.2 lb) of carrots, grated on a coarse grater, to the tomatoes and mix well.
Step 6
Put the pot on the stove over medium heat, bring to a boil, and cook for about 1 hour, stirring occasionally and skimming off any foam.
Step 7
Press 4 medium heads of garlic through a garlic press into a bowl.
Step 8
Finely chop 1 chili pepper (with seeds if you like it hotter).
Step 9
Combine the chopped chili with the garlic and mix.
Step 10
Dice 1 kg (2.2 lb) of bell peppers into medium-sized cubes.
Step 11
After 1 hour of simmering, reduce the heat and add sugar, salt, the garlic-chili mixture, vegetable oil, and whole black peppercorns to the pot.

Also add the diced bell peppers.

Mix everything thoroughly and cook for another 20 minutes.

After 20 minutes, add 1 dessert spoon of acetic acid (vinegar essence, diluted to the correct concentration) to the pot, stir well, and continue cooking for about 7 minutes.

While hot, pour the appetizer into sterilized jars.

Seal the jars tightly with sterilized lids.

Turn the jars upside down, cover with a warm blanket, and let cool for 24 hours. Then store in a cellar or refrigerator.
