Belgian waffles

Preparation
Step 1
Start by preheating a Belgian waffle iron on the hob over medium heat, or if using an electric waffle maker, heat it according to the manufacturer’s instructions. This recipe also works with a standard waffle iron, though it will yield more, thinner waffles.

In a large mixing bowl, sift together the flour, baking powder, caster sugar, and a pinch of salt. Create a well in the centre.

In a separate jug, whisk the milk, egg yolks, melted butter, and vanilla until smooth. Pour this mixture into the dry ingredients and whisk until the batter is completely smooth and well combined.
Step 4
In a clean bowl, whisk the egg whites with a pinch of salt until they form firm but not stiff peaks. Gently fold the whipped whites into the batter using a large spoon, being careful not to over-mix.
Step 5
Spoon the batter into the preheated waffle iron - the exact amount will depend on your waffle maker - and cook on the hob for 2-3 minutes on each side, or follow your machine's instructions, until the waffles are golden and risen. Keep the cooked waffles warm as you prepare the rest.
Step 6
Serve the waffles topped with fruit and whipped cream, dusted with icing sugar, or enjoy them with classic maple syrup.
