How to make a salad with raisins, walnuts, beets, cheese, and garlic? First, prepare the ingredients. You can use not only boiled beets, but also beets baked in the oven. Stores also sell ready-cooked vacuum-packed beets, which can save time.
Step 2
Boil the beets in their skins or bake them in foil in the oven until tender. Cool the beets, peel, and grate on a coarse grater (or a julienne grater).
Step 3
Grate the cheese on the same grater as the beets. What cheese works here? Any firm or semi-firm cheese - just choose one that’s tasty and good quality, without milk-fat substitutes. I used a simple firm fermented cheese.
Step 4
Pour boiling water over the raisins and leave for 10 minutes.

Drain the water and pat the raisins dry. Any raisins work: dark or light, large or small. You can replace or supplement them with other dried fruits, such as prunes or dried apricots.

Lightly toast the walnuts in a dry skillet and chop with a knife. If you like, replace the walnuts with cashews, hazelnuts, or pine nuts. Or use toasted hulled sunflower seeds instead.
Step 7
In a small bowl, combine olive oil, lemon juice, runny honey, salt, and pepper, and whisk with a fork until smooth. You can use any vegetable oil instead of olive oil. You can also replace the oil-based dressing with mayonnaise or sour cream.

In a bowl, combine the beets, cheese, raisins, walnuts, and one garlic clove pressed through a garlic press.
Step 9
Pour the dressing over the salad and mix. Refrigerate for 20 minutes so it can meld.
Step 10
Mound the beet salad with cheese, raisins, and walnuts onto a plate, garnish with fresh herbs, and serve. Enjoy!
