Beet Salad with Raisins
So tasty and healthy - it will be the first to disappear from your table! Beet salad with raisins works for a regular dinner or a festive spread. The combo of sweet beets and raisins with crunchy nuts, sharp garlic, and mayonnaise is spot-on. The beets aren’t boiled here - they’re roasted in the oven.

Step 1
How to make beet salad with raisins, walnuts, garlic, and mayonnaise? Prepare the ingredients. Choose sweet, brightly colored beets. Use seedless raisins and already shelled nuts. You can dress the salad with mayonnaise, or use vegetable oil, sour cream, or yogurt for a lighter option. Any nuts you like will work.

You can boil the beets, but for a tastier and healthier result, roast them. How to roast beets: Wash the beets well under running water using a brush, pat dry, and wrap in foil. If the foil is thin, use a double layer. Place the wrapped beets in a baking dish.
Step 3
Roast at 200°C (392°F). Small or young beets: 35-60 minutes; larger, mature beets: up to 2 hours. Time will also depend on your oven. Check doneness with a wooden skewer - it should slide in easily. Cool completely, then peel.
Step 4
Prepare the other ingredients. Rinse the raisins, then pour boiling water over them and soak for 10 minutes.
Step 5
Drain the raisins in a sieve, spread on paper towels, and pat dry well.
Step 6
Chop the walnuts into small pieces. If you like, lightly toast them in a dry skillet (no oil).
Step 7
Grate the beets on a coarse grater, or dice them small - whichever you prefer.
Step 8
Put the beets in a bowl, add the raisins, nuts, and a couple of garlic cloves pressed through a garlic press.
Step 9
Mix the salad. Dress to taste with mayonnaise, oil, sour cream, or yogurt. Salt to taste. (If using mayonnaise, I don’t add salt.)
