Beet Salad with Cheese and Garlic

Light, simple, and budget-friendly - great for holidays or everyday meals! Beet salad with cheese and garlic requires only a few ingredients. The layered assembly in a ring mold makes it look festive, while the combination of beet and cheese with garlic-mayo sauce gives it a unique flavor.

Preparation
Step 1
You can use not only boiled beets but also oven-roasted ones. Stores often sell pre-cooked beets in vacuum packaging, which can save cooking time.
Step 2
Boil the beets in boiling water until tender, or wrap them in foil and bake in a preheated oven at 350°F (180°C) for 1 hour. Let the cooked beets cool, peel them, and grate on a coarse grater or a Korean-style carrot grater.
Step 3
Grate the cheese on a coarse grater. What kind of cheese works? Any type - hard or semi-hard - as long as it's tasty and made without milk fat substitutes.
Step 4
Prepare the garlic-mayo sauce. In a small bowl, combine mayonnaise, minced garlic cloves (using a press), ground black pepper, and salt to taste. Mix well. You can substitute fresh garlic with 1 tsp dried garlic. Feel free to add other spices to taste. Always season according to your personal preferences for saltiness, sweetness, bitterness, spiciness, or acidity.
Step 5
You can either mix all ingredients together and serve in a salad bowl, or make a layered salad using a ring mold. For a more festive look, layer the salad in a 5.5–6.3 in (14–16 cm) ring mold placed on a plate. You can also use smaller individual molds (3–4 in / 8–10 cm diameter). Place some grated beet as the first layer and drizzle with mayo sauce.
Step 6
Add a layer of grated cheese on top and drizzle it with the same sauce.
Step 7
Repeat the beet and cheese layers once more. The top layer should be beet. Refrigerate the salad for 30 minutes to chill and let the flavors blend.
Step 8
Before serving, remove the ring mold. Garnish the salad however you like. I shaped the top layer into a rose. Enjoy!
