Beet and Boiled Carrot Salad with Onion

Step 1
Prepare the necessary ingredients to make a delicious diet-friendly vegetable salad.

Slice two onions into thin half-rings.
Step 3
Place the sliced onion into a deep bowl.

Cut one boiled carrot into matchstick strips (any shape you like).

Add the carrot strips to the bowl with the onion.

Cut one boiled beet into matchstick strips (any shape you like).

Add the beet strips to the bowl with the carrot and onion.

Add 2 tablespoons apple cider vinegar to the bowl of chopped vegetables.

Add salt to taste.

Mix all the ingredients well and let the salad stand for 15 minutes.

Cut four small pickled or fermented cucumbers into strips (any shape you like).

Finely chop herbs/greens of your choice.

Add the cucumbers and herbs to the bowl with the vegetables.

Add a pepper blend to taste.

Add vegetable oil to taste (preferably unrefined), if desired.
