Beer cheese dip

Preparation
Step 1
Melt the butter in a small, heavy-based saucepan over medium-low heat. Stir in the flour using a wooden spoon to form a roux and cook for 1 minute, stirring constantly.
Step 2
Slowly add the ale while stirring to create a thick paste. Let it cook for another minute to burn off the alcohol, continuing to stir to prevent sticking.
Step 3
Add the milk gradually, stirring well between each addition to keep the sauce smooth. Once all the milk is incorporated and the sauce is velvety, add both cheeses along with paprika and mustard powder.
Step 4
Allow the cheese to melt fully, then season with salt and pepper to taste. Serve the dip directly in the pan or pour into a warm bowl. Ideal for dipping with chips, bagel pieces or fresh pretzels.
