Beef stew in vegetable sauce

Preparation
Step 1
Prepare all the ingredients needed for cooking.
Step 2
Cut the beef into larger pieces and place them in a pot.
Step 3
Add the chopped onion, bay leaf, curry spices, and thyme to the meat. Add the bouillon cubes and salt.
Step 4
Pour in the water and cook everything, stirring occasionally, until the beef becomes tender.
Step 5
Meanwhile, place the cleaned bell peppers, halved onions, garlic cloves, ginger, and tomato paste into a food processor and blend until smooth. If needed, add a little water to help achieve a purée consistency.
Step 6
Heat oil in a pot and pour in the prepared purée.
Step 7
Add the cooked beef pieces to the sauce, pour in some of the broth (from the pot where the meat was cooked), and add all the spices. Cover the pot and let everything cook for about 10 minutes.
Step 8
Serve with boiled rice.
