Beef Liver Patties

Preparation
Step 1
How do you fry beef liver patties? Prepare the necessary ingredients. I used mayonnaise with 67% fat. You can replace it with the same amount of full-fat sour cream or cream. This will make the patties juicier. Pour boiling water over the liver and remove the membrane by lifting it with a sharp, thin-bladed knife. Then cut the liver into large pieces, rinse it, and place it in a colander so the water can drain.
Step 2
Peel the onion and cut it into four pieces. To keep the onion from stinging your eyes while cutting, rinse both the onion and the knife with cold water. Peel the garlic as well.
Step 3
Place the onion, garlic, and liver into the blender bowl. I first added half of the prepared onion and half of the liver so it would blend more easily. You can add all the garlic at once. It is better to place the onion and garlic at the bottom so they blend better.
Step 4
Blend all the ingredients into a smooth mixture. Then do the same with the remaining onion and liver. You can also place all the ingredients in a deep bowl and blend them with an immersion blender. In this case, the mixture usually turns out thicker. If you do not have a blender, you can use a meat grinder.
Step 5
Pour the liver mixture into a deep bowl.

Add the egg, mayonnaise, flour sifted through a small sieve, and salt and pepper to taste.
Step 7
Mix everything thoroughly so there are no flour lumps. You can let the mixture stand for about 10 minutes, then mix it well once more. This way, no lumps will remain, as the flour will swell and blend well into the mixture.
Step 8
Heat 2 tablespoons of vegetable oil in a pan. Do not add too much oil, so the patties do not turn out greasy. Spoon small portions of the mixture into the pan, shaping round or oval patties. I used a wooden spoon to add equal amounts of the mixture so the patties would be the same size. Fry on one side over medium heat for about 3 minutes.
Step 9
Turn the patties over and fry for another 2 minutes. Before frying the next batch, pour a couple more tablespoons of oil into the pan and heat it well. Serve the finished beef liver patties with any side dish. Enjoy!
