Beans with Vegetables in Tomato Sauce

Step 1
How to make beans stewed with vegetables in tomato sauce? Believe me, it’s really not difficult. Prepare all the necessary ingredients.

Soak the beans in cold water and leave them for several hours. I recommend leaving them in water overnight. The next day, change the water, put the beans on the stove, and cook until fully done without adding salt. Cooking takes about 60-90 minutes, depending on the variety. You can check this information on the package. My white beans cooked for 1 hour. When the beans are ready, drain them in a colander. Do not pour out the cooking liquid; you may need it later.

In the meantime, peel the onion and finely chop it.

Peel the carrot and grate it on a coarse grater.

Pour some vegetable oil into a heated skillet. Add the onion and carrot and sauté them.

Wash the bell pepper, remove the stem and seeds, and cut the flesh into medium-sized cubes.

Add the chopped pepper to the skillet with the onion and carrot. If you like, you can also add some hot chili pepper.
Step 8
Add the tomato sauce to the vegetables. I use ready-made sauce. You can replace it with fresh or frozen tomatoes, tomato juice, or tomato paste diluted with water. Simmer for about 5 minutes.

While the vegetables are simmering, finely chop the herbs and press the garlic through a garlic press.

Add the cooked beans and mix everything well. You can use white beans or beans of any other color. You can also substitute canned beans or fresh/frozen green beans.

Add the garlic, herbs, salt, and pepper. You can also add your favorite spices to taste. Bring everything to a boil, cover with a lid, and simmer over low heat for 10-15 minutes. If the dish turns out too thick, add some of the reserved bean cooking liquid.
