Beans with Garlic

Super simple, super tasty, and filling! A real find! Beans with Garlic can be served as a standalone dish or as a side to meat or poultry. This salad is rich in protein, making it ideal for those following a diet or with dietary restrictions.

Preparation
Step 1
You can use any type of beans – red, white, or mixed. I used kidney beans – they’re bright, fairly large, and keep their shape when cooked. Any vegetable oil works for dressing; I used olive oil.
Step 2
Soak the beans in cold water for 6–8 hours. I usually soak them overnight and cook them in the morning. Soaking time may vary depending on the type, so check the instructions on the package, where you’ll also find the cooking time.
Step 3
Drain the soaking water and place the beans in a pot. Cover with fresh water and bring to a boil. Cook over medium heat until tender. I cooked mine for about 1 hour. Add salt to taste at the end of cooking.
Step 4
Drain the cooked beans in a colander and let them dry. To save time, you can also use canned beans.
Step 5
Wash and dry the cilantro and dill, then finely chop them. If desired, substitute or combine with other herbs like parsley, basil, green onions, or wild garlic.
Step 6
In a salad bowl, combine the beans, chopped herbs, and garlic pressed through a garlic press. Drizzle with vegetable oil, season with salt and pepper, and mix well. You can also add spices to taste such as khmeli-suneli, paprika, etc.
