Beans and Beef Combo
Hearty stewed beans simmered in a rich oil and tomato sauce with ground beef, peppers and warming spices for a bold, comforting dish.

Preparation
Step 1
Rinse the dried beans thoroughly under cold water, removing any stones or debris. Place the beans in a large pot with the bay leaves and diced onions, then cover with fresh water. Bring to the boil and cook over a medium heat. Cover and continue cooking until the beans are tender. Drain and set aside.
Step 2
In a separate large pot, heat the oil over a medium heat. Add the chopped onion and cook for 2-3 minutes, until translucent.
Step 3
Stir in the minced garlic and browned ground beef, cooking for about 1 minute until fragrant.
Step 4
Add the paprika, cayenne pepper, thyme, salt and seasoning powder to taste. Stir in the diced tomatoes with their juices and add the whole chillies. Cook until the tomatoes have softened.
Step 5
Add the chopped bell pepper and simmer for 3-5 minutes, stirring to combine all the ingredients.
Step 6
Bring the mixture to a gentle simmer, then reduce the heat to low. Cover and allow the stew to simmer, stirring occasionally so the flavours blend well.
Step 7
Pour the stew into the cooked beans. Add water to reach your desired consistency, taste and adjust the seasoning as needed before serving.
