Bean, Mushroom and Cheese Salad
The tastiest and simplest salad with mushrooms and beans. Very fast! The combination of beans and mushrooms is one of the best: it’s not only very tasty but also hearty and nourishing. This salad will complement lunch or dinner on weekdays and also decorate any festive table.

Step 1
How to make a salad with beans, cheese, and salted mushrooms? Prepare the ingredients. You can use any beans: cooked or canned. You can also use different mushrooms: fried, pickled, or salted. I used salted wild mushrooms; you can use any other forest mushrooms or champignons. Dice the mushrooms into small cubes. Fresh mushrooms can be sautéed in vegetable oil.

I cooked dried beans - do this in advance so that all ingredients are ready when you assemble the salad. Soak the beans overnight in cold water, change the water in the morning, and boil for 30 minutes until tender. Drain the water.
Step 3
You can also add other tasty ingredients to complement the mushrooms and beans, for example hard-boiled eggs. Boil the eggs for 10 minutes so the yolk doesn’t get an unattractive gray-blue ring.
Step 4
Cool the eggs, peel them, and grate or finely chop with a knife. If you’re layering the salad, you can separate yolks from whites if desired.
Step 5
Peel the onion and finely chop it. It’s better to use a mild salad onion, or marinate a regular onion in wine vinegar or pour boiling water over it to reduce bitterness. If you like, you can use green onion instead, and also any other fresh herbs.
Step 6
Cheese complements these ingredients very well. You can use any type: hard, soft, smoked, or processed - depending on taste. Processed cheese is harder to grate, so you can freeze it briefly and then grate easily. I used smoked sausage-style cheese, which adds a pleasant smoky note.
Step 7
Combine everything in a large salad bowl and simply mix, dressing with mayonnaise. Add salt and ground black pepper to taste. Or, for a festive table, layer the ingredients and spread a thin layer of mayonnaise between each layer.

Let the salad rest in the refrigerator to absorb the flavors, then serve. Enjoy!
