Bean and pea stew

A comforting vegetable and bean stew simmered with paprika, herbs, and a touch of tomato - hearty, flavorful, and perfect for a warming meal.

Preparation
Step 1
Warm the oil in a large saucepan or casserole set over medium heat, then add the onion, celery, and red pepper. Season generously with salt and pepper, cooking for 7-8 minutes until softened. Stir in the garlic, paprika, and herbs, and continue to cook for 2 minutes.
Step 2
In a jug, measure out 600ml of hot water and dissolve the stock cube. Whisk in the flour until smooth. Pour this mixture into the pan along with the beans and tomato purée. Bring everything to a gentle simmer and cook for 5 minutes. Add the peas and continue to simmer over low heat for another 5 minutes.
Step 3
Ladle the stew into warmed bowls and finish with a garnish of reserved celery leaves, a drizzle of olive oil, and a touch of freshly cracked black pepper.
