BBQ Sauce with Tomato Paste and Cilantro

Preparation
Step 1
Instead of cilantro, you can use parsley or basil. You can also mix several herbs for a richer and more aromatic sauce. I used about 1 oz (25 g) of cilantro and 0.2 oz (5–7 g) of parsley. Choose a high-quality tomato paste.
Step 2
If your tomato paste is thick, dilute it with water. How much? Aim for a sour cream–like consistency. I used about ⅔ to ¾ cup (150–200 ml) of water. Place the tomato paste in a skillet, heat it while stirring constantly until it starts to boil. Then remove it from the heat and let it cool.
Step 3
Transfer the tomato paste into a blender. Peel the garlic and press it, then add it to the blender.
Step 4
Rinse the herbs under cold running water and pat them dry with a kitchen towel. Roughly chop the herbs and add them to the blender with the rest of the ingredients. Add salt to taste, and if needed, a bit of sugar. Add ground black pepper and paprika.
Step 5
Blend everything until smooth and uniform in texture.
Step 6
Pour the sauce into a bowl or a jar that fits. Place it in the fridge for a few hours so the flavors can develop.

Serve the chilled tomato paste and cilantro sauce with BBQ and other dishes!
