Step 1
Heat a little olive oil in a pan and gently fry the chopped onion and crushed garlic along with the chopped chilli, crushed fennel seeds, and sugar. Cook until the onion begins to soften and the mixture becomes fragrant.

Stir in the soy sauce and ketchup, then season with salt and pepper to taste.
Step 3
Bring the mixture to a boil, then reduce the heat and let it simmer for a few minutes to allow the flavours to meld together.
Step 4
Serve as a dipping sauce or use it to coat spare ribs, chicken, or sausages for a sticky, flavourful finish.
