Step 1
How to make batter for wafer rolls in an electric waffle iron? I didn’t make the full batch - my amounts are calculated for 2 eggs, so I recalculated all ingredients accordingly. You can reduce the sugar to taste; the original version is quite sweet.
Step 2
Put the butter in a small saucepan. Melt it using any method you like. I melted it on the stove over low heat. The main thing is not to let it boil. I don’t wait until the whole piece fully melts - once most of it has melted, I turn off the heat and the rest melts from residual warmth. Let the butter cool.
Step 3
Crack the eggs into a bowl, add sugar and vanillin. Don’t add too much vanillin: it can make the batter bitter. A pinch is enough. Whisk the eggs with the sugar using a hand whisk. We don’t need airy fluffiness here, so there’s no need to beat to foam.
Step 4
Add the cooled melted butter to the eggs. Mix.
Step 5
Add the flour. Whisk until the batter is smooth and uniform.
Step 6
Preheat the waffle iron. If needed, grease the plates with oil. Nothing sticks to my waffle iron, so I don’t grease it. Also, the batter has enough fat. Adjust to your model. Spoon in 2 tablespoons of batter per waffle.
Step 7
Cook the waffle until golden. Different models bake differently, so judge by the color. Remove the hot waffle with a spatula.
Step 8
Roll the waffle into a tube while it’s still hot. Once it cools, it hardens and may crack when rolling. Be careful - it’s very hot! Eat the wafers right away or fill them with cream.
