Step 1
How do you make batter for Viennese waffles in an electric waffle maker? Prepare the ingredients. Take the butter out of the refrigerator ahead of time so it can soften and be easy to work with. You can cut it into pieces right away and put it into the deep bowl in which you will make the batter, so it softens faster. Choose high-quality natural butter without vegetable additives.

Add the sugar to the bowl with the butter pieces. Mix the ingredients with a mixer at low speed. Beat the butter with the sugar until light and fluffy.

Next, crack the eggs into the butter mixture. Beat everything again until smooth, this time at higher speed.

Pour the milk into a small saucepan and warm it slightly to 35-40°C (95–104°F). Carefully pour the lukewarm milk into the bowl in portions without stopping the mixer.

After all the milk has been added, pour a little lemon juice into the batter. Mix the flour with the baking powder. Then sift them and add them to the bowl with the other ingredients in portions as well. Continue mixing the batter. Bring it to a smooth consistency with no lumps.

Adjust the batter consistency with the amount of flour. It should be similar to sour cream, like batter for pancakes, but a little thicker. Let the batter rest for 10 minutes. This is done so that the gluten develops in the flour. After that, you can move on directly to baking the waffles.

Preheat the waffle maker or a multi-baker fitted with special plates for making Viennese waffles. Be sure to grease the plates with a small amount of vegetable oil so the waffles do not stick and can be removed easily. A silicone brush is the most convenient tool for this.

Place 2 tablespoons of waffle batter in the center of the heated plates. You can quickly spread the batter from the center toward the edges with a spoon. Close the waffle maker or multi-baker. Bake the waffles for 5-7 minutes until they are a beautiful golden color. Check for doneness from time to time, because waffle makers vary in power. Remove the finished waffles from the mold and trim them with a knife if necessary.

Viennese waffles baked from this batter are especially delicious when freshly made. Serve them with ice cream, jam, various sauces, berries, and fruit. Enjoy!
