Barbecue-style chicken drumsticks

Step 1
Preheat the oven to 220C.
Step 2
Place the potatoes in a bowl, drizzle with oil, and season with a little salt and plenty of freshly ground black pepper. Arrange the wedges on a large baking tray, skin-side down - this way they won’t need to be turned. Bake for 30-35 minutes until golden.
Step 3
Meanwhile, line another baking tray with foil or parchment paper and arrange the chicken drumsticks on top. Season well with salt and pepper, then place the tray on a higher oven shelf above the potatoes to allow the heat to circulate. Bake for 20 minutes.
Step 4
After 20 minutes, remove the chicken from the oven and generously brush with the barbecue sauce. Return it to the oven for another 10-15 minutes, or until the chicken is fully cooked through, sticky, and slightly charred in places. The potatoes should be pale golden-brown and crisp.
Step 5
Serve the barbecue chicken alongside the wedges and, if you wish, coleslaw. Any extra sauce can be served on the side for dipping.
