Banana Pudding

Elizabeth I’s favorite delicacy - try it, you won’t regret it! Making banana pudding is not only fun but also very aromatic.

Easy
About 45 min.
Preparation
Step 1
Take any cookies you like, as long as they are tasty and crumbly. I used sponge biscuits, but sugar cookies like ladyfingers, shortbread, or even oatmeal cookies will work. Use any fat percentage of milk. For starch, take either cornstarch (a heaping spoon) or potato starch (a level spoon).
Step 2
In a small bowl, mix all dry ingredients - sugar, starch, flour, and vanilla. Stir well.
Step 3
Heat the milk until hot. Place the egg yolks into a saucepan with a thick bottom (so the pudding won’t burn). While whisking constantly, add about one-quarter of the hot milk to the yolks. Mix until smooth.
Step 4
Add the dry mixture to the egg-milk mixture spoon by spoon, whisking well after each addition to avoid lumps.
Step 5
Once all the dry ingredients are added, pour in the remaining milk and mix again.
Step 6
Place the saucepan over low heat. Cook the pudding while stirring constantly until it thickens. Once it comes to a boil, cook for 2 more minutes and remove from heat. Let the pudding cool completely.
Step 7
Crush the cookies. You can break them by hand or crush them in a bag with a rolling pin. Leave larger chunks or make a fine crumb - your choice.
Step 8
Slice the banana into thin rounds.
Step 9
Take serving glasses or bowls. Add a layer of cookie crumbs to the bottom, then banana slices, then a few spoons of pudding. Repeat the layers: cookies/banana/pudding. Chill the dessert in the refrigerator for 30 minutes.
Step 10
Traditionally, the top of the pudding is decorated with whipped cream or broken meringue. I chose meringue. You can also sprinkle nuts, chocolate, or berries. Serve and enjoy!
