Banana muffins

Soft, spiced banana muffins that are perfect for breakfast or a midday treat. These easy-to-make muffins are moist and full of flavour.

Preparation
Step 1
Preheat the oven to 190°C. Melt the butter and allow it to cool slightly. Mash the bananas thoroughly and set aside.
Step 2
In a large bowl, sift together the flour, baking powder, bicarbonate of soda, salt, cinnamon, and nutmeg. Add the caster sugar and stir to combine.
Step 3
In a separate bowl, use a fork to beat the eggs with the vanilla extract, melted butter, and milk. Stir in the mashed bananas until evenly mixed.
Step 4
Make a well in the centre of the dry ingredients and pour in the wet mixture. Using a fork, mix everything together just until combined - don’t overmix; the batter should remain slightly lumpy.
Step 5
Line a muffin tin with paper cases or lightly grease the moulds with oil or butter. Spoon the batter into the cases, filling each almost to the top.
Step 6
Bake in the preheated oven for 20-25 minutes, or until the muffins are golden and begin to pull away from the sides of the tin when gently touched.
Step 7
Remove the muffin tray from the oven and place on a wire rack to rest for 5 minutes. Then, take the muffins out of the tin and allow them to cool on the rack for another 5 minutes before serving.
