Banana doughnuts

Preparation
Step 1
In a large bowl, whisk together the flour, baking powder, salt, and sugar. In a separate bowl, mash the banana into a smooth paste, then mix in the egg, vanilla extract, and oil.

Pour the banana mixture and milk into the dry ingredients and whisk to form a thick batter.
Step 3
Heat oil in a deep saucepan for deep-frying, bringing it to 150C. (CAUTION: hot oil can be dangerous. Never leave unattended.)
Step 4
Using a teaspoon, gently drop small scoops of the batter into the hot oil, using a second spoon to help slide it in. Fry a few at a time to avoid overcrowding, allowing space for the doughnut balls to move freely. Each batch takes about 4–5 minutes to cook until golden brown.
Step 5
Use a slotted spoon to remove the cooked doughnuts and drain on kitchen paper. Roll them in sugar while still warm, then continue with the remaining batter.
Step 6
Best enjoyed warm, fresh from the fryer.
