Easy
About 30 min.
Preparation
Step 1
You can adjust the amount of sugar depending on how sweet the bananas are. You can also use more bananas depending on their size.
Step 2
Wash the eggs well and pat them dry. Crack the eggs into a bowl. Add vanilla. Start whisking the eggs at a low speed with a mixer. When foam appears, gradually add the sugar in portions and increase the mixer speed.
Step 3
Beat the eggs with sugar until you get a fluffy, pale mixture - about 5 minutes. The fluffiness of the cake will depend on how well they’re beaten. Wash the lemon well with baking soda. Grate the zest - the yellow outer layer - on a fine grater, avoiding the white part as it’s bitter. The lemon will give a pleasant citrus aroma, but you can skip it if you prefer.
Step 4
Sift the flour and baking powder into the eggs. This not only removes any debris but also aerates the flour, making the cake fluffier.
Step 5
Gently fold in the flour from the bottom up with slow motions. A silicone spatula works best as it won’t deflate the eggs. The batter should be smooth and flowing. Remember that the amount of flour needed may vary.
Step 6
Take any suitable baking pan. Mine is silicone, 8×3.5 inches (20×9 cm). No need to grease silicone; for a regular pan, line with parchment or grease with butter. Pour in the batter. Peel the banana, cut in half, and place cut side up on the batter. You can also place bananas at the bottom or chop them into the batter.
Step 7
Bake in a preheated oven at 350°F (180°C) for 30-45 minutes, depending on the size. Your time and temperature may vary. Check doneness with a wooden skewer - it should come out dry from the center.
Step 8
Let the cake cool and remove from the pan. Serve and enjoy!
