Banana and oat cookies

These healthy banana oat cookies are naturally sweetened, packed with warm spices and chunks of chocolate, and baked to golden perfection - a simple, wholesome treat.

Preparation
Step 1
Preheat the oven to 180C and line a baking tray with baking paper.
Step 2
In a bowl, mash the ripe banana until smooth. Pulse the oats briefly in a blender to create a mix of fine oat flour and whole flakes, then stir them into the mashed banana until fully combined.
Step 3
Fold in the chopped chocolate, a pinch of salt, cinnamon, and ginger, mixing everything thoroughly. The dough will be sticky.
Step 4
Using a spoon and wet hands, divide the mixture into four portions and shape into cookies about 1cm (½in) thick directly on the prepared tray. Since the cookies won’t spread during baking, shape them as desired.
Step 5
Bake for 18-20 minutes, until the edges turn golden-brown. Let the cookies cool on the tray for a few minutes before transferring them to a wire rack to cool completely.
