Banana and blueberry muffins

Preparation
Step 1
Preheat the oven to 180C and line eight holes of a muffin tin with paper cases.
Step 2
Sift the flour, baking powder, cinnamon, and salt into a large mixing bowl, then add the blueberries and gently coat them in the flour mixture.
Step 3
In another bowl, lightly whisk together the mashed bananas, honey, vegetable oil, egg, and milk until smooth.
Step 4
Pour the wet ingredients into the dry mixture and stir gently until just combined - avoid overmixing to keep the muffins light and fluffy.
Step 5
Spoon the batter evenly into the prepared muffin cases. Combine the extra half teaspoon of cinnamon with the caster sugar and sprinkle over the tops.
Step 6
Bake for 20 minutes, until the muffins have risen and are lightly golden. These are best enjoyed warm, fresh from the oven.
