Baked Zucchini with Ground Meat and Potatoes

To ensure the oven reaches the desired temperature, turn it on in advance (about 10-20 minutes before starting to cook).
Preparation
Step 1
Prepare the necessary ingredients. You can use any ground meat: beef, pork, or chicken. I used a mix of pork and beef. Preheat the oven to 180°C (356°F).
Step 2
Peel the onion and grate it finely or blend it in a food processor. If you're making the ground meat yourself, you can grind the onion together with the meat.
Step 3
Add the grated onion, ground black pepper, and salt to the ground meat. Mix well.

Wash and dry the zucchini. If it’s young with thin, tender skin, you don’t need to peel it. If the skin is tough, peel it and remove the seeds. Grate the zucchini coarsely, sprinkle it with salt, and mix. Once the vegetable releases its juice, squeeze out the excess liquid.

Peel and wash the potatoes, then grate them coarsely. Sprinkle with salt and squeeze out excess juice as well.
Step 6
Grease a baking dish with a small amount of vegetable oil. My baking dish is 18×18 cm (7×7 inches). Spread the grated potatoes evenly at the bottom and smooth them with a spoon.
Step 7
Evenly spread the ground meat as the next layer.

Add a layer of grated zucchini and press it down lightly with a spoon.

Spread any tomato sauce over the zucchini layer.
Step 10
Grate the cheese on a coarse grater. You can use any cheese—hard, semi-hard, or soft—just make sure it has a good taste and does not contain artificial milk fat substitutes.

Sprinkle the grated cheese over the casserole.

Wash the eggs. In a bowl, whisk the eggs with sour cream until smooth. Always wash eggs before use, as even clean-looking shells may contain harmful bacteria.

Pour the egg-sour cream mixture over the casserole.

Wash and dry the tomatoes. Slice them into rounds. Choose ripe yet firm tomatoes with a thick skin so they retain their shape when sliced.

Arrange the tomato slices on top of the casserole.

Bake the dish in a preheated 180°C (356°F) oven for about 35-40 minutes. Adjust the cooking time based on your oven's features, as they may vary. If the top browns too quickly, cover the dish with foil.

Once baked, slice the zucchini and potato casserole into portions and serve as a main dish. Enjoy your meal!
