Baked Semolina Pudding without Cottage Cheese
Wonderfully tender and melt-in-the-mouth – perfect for a family breakfast! This baked semolina pudding is made from thick milk porridge and requires no cottage cheese. Serve it with jam, condensed milk or a sweet sauce.

Preparation
Step 1
Prepare the ingredients. Milk of any fat percentage will work. Use your preferred type of semolina.
Step 2
Pour the milk into a saucepan and bring it to a boil. Add the salt and sugar, stir and reduce the heat.
Step 3
Gradually pour the semolina into the milk in a thin stream, stirring continuously in circular motions to prevent lumps. Cook for about 5 minutes, stirring constantly, until a thick porridge forms.
Step 4
Add the butter to the hot porridge and stir until melted. Leave the semolina porridge to cool to room temperature. Transfer it to another bowl to help it cool more quickly, if desired.
Step 5
Beat the eggs with a fork or whisk until smooth. Add 2 teaspoons of the beaten egg to the sour cream and mix well.
Step 6
Add the remaining beaten egg to the cooled semolina porridge and mix thoroughly.
Step 7
Lightly grease the bottom and sides of an 7 × 7-inch baking dish with butter. A silicone mold does not need greasing, but a metal, ceramic or glass dish should be lightly coated to prevent sticking. Transfer the semolina mixture to the prepared dish and smooth the surface.
Step 8
Spread the sour cream and egg mixture evenly over the top.
Step 9
Bake in an oven preheated to 350°F for 25–30 minutes, until the top is lightly golden. Adjust the baking time according to your oven. Remove the pudding from the oven and leave it to cool in the dish.
Step 10
Cut the baked semolina pudding into pieces and serve with jam, sweetened condensed milk or fruit preserves. It is delicious both warm and cooled.
