Baked Rice and Egg Pie

Golden and very filling! The perfect baked dish for any occasion! Baked Rice and Egg Pie is made with yeast dough, which takes the longest to prepare. But the result is worth it. This fragrant pastry will leave no one indifferent.

Preparation
Step 1
Sift the flour in advance to aerate it. You can add other herbs to the green onions, such as dill or parsley.
Step 2
To make the dough, heat the milk to a warm temperature (95–100°F / 35–38°C). It should be warm but not hot, or the yeast will die. Pour the milk into a bowl and add yeast, salt, and sugar.
Step 3
Add 150 grams (1¼ cups) of flour and mix everything. Cover with a towel and let it sit for 30 minutes until bubbles appear on the surface.
Step 4
Melt the butter and let it cool—it should not be hot. Add the eggs and melted butter to the dough.
Step 5
Gradually add more flour and knead the dough. Adjust the amount of flour based on the dough's consistency.
Step 6
The dough should be soft, elastic, and barely sticky. When it's almost ready, grease your hands and the surface with vegetable oil to prevent sticking. Cover the bowl with a towel and let the dough rise in a warm place for 1 hour.
Step 7
Meanwhile, prepare the filling. Cook the rice in boiling water for 12–15 minutes until soft. Drain and rinse with cold water. Boil the eggs for 7–8 minutes, then drain the hot water and cool them in cold water. Peel the cooled eggs. Wash and dry the green onions.
Step 8
Finely chop the eggs and mix them with the rice. Add the chopped green onions, mayonnaise, and salt. Mix everything well.
Step 9
Grease a baking pan with vegetable oil. Divide the dough into two uneven parts. Roll out the larger part and press it into an 18–22 cm (7–9 inch) baking pan, forming small edges. Spread the prepared filling evenly inside.
Step 10
Roll out the smaller part of the dough into a circle, make small cuts, and cover the pie with it. Trim off the excess dough from the edges.
Step 11
Use leftover dough to create decorations for the pie’s surface. Brush the top with egg yolk and bake in a preheated oven at 350°F (180°C) for 25–30 minutes. Adjust according to your oven.
Step 12
The finished pie will rise and develop a beautiful golden color. Remove it from the oven, let it cool slightly, and enjoy! Bon appétit!
