Baked Red Fish with Cheese

Preparation
Step 1
You can use any red fish (I used salmon). The dish turns out juiciest and tastiest with fresh fish that has not been frozen. If using frozen fish, thaw at room temperature. Clean off scales, rinse, and pat dry. Cut the fillet into 2-4 equal pieces.
Step 2
Prepare the filling. Take any soft cheese of your choice (I used feta) and crumble it into small pieces with your fingers or mash with a fork. Slice olives into thin rings, half-rings, or small cubes. Mix the cheese and olives in a deep bowl.
Step 3
Add ground pepper and other spices to taste. Rinse, dry, and chop fresh herbs. For this recipe, I used a few sprigs of thyme, parsley, and green onion. Mix everything well.
Step 4
Make deep lengthwise cuts in each fish piece with a sharp knife. Place the salmon skin-side down into a baking dish of suitable size. Lightly salt if needed, but keep in mind the cheese and olives are already salty. (I didn’t add salt.)
Step 5
Stuff the cheese mixture into each cut. Spread any remaining cheese on top of the fish. Drizzle evenly with olive oil or refined vegetable oil. At this stage, you can also sprinkle the fish with fresh lemon juice.
Step 6
Place the dish into a preheated oven and bake for 25-30 minutes until fully cooked. At what temperature? It depends on your oven. I baked for about 30 minutes at 200°C (392°F) on “top-bottom” mode.
Step 7
Serve hot with fresh vegetables and salads. The fish is also delicious when chilled.
