Baked Red Fish in Sour Cream in the Oven

Juicy, aromatic, hearty, and incredibly delicious! Red fish in sour cream in the oven with tomatoes and cheese is a wonderful festive dish. The fish melts in your mouth with a pleasant tang in a delightful sour cream sauce.

Preparation
Step 1
You can use either fresh or frozen fish. If frozen, thaw it at room temperature until fully defrosted. You can cook steaks or fillets. I had two large salmon steaks, which I cut in half along the backbone.
Step 2
Clean the salmon from scales and rinse under running water. Pat each piece dry with paper towels. Lightly season the fish with salt and pepper.
Step 3
Prepare the sauce: place sour cream in a small deep bowl. Squeeze in juice from half a small lemon. Rinse and finely chop dill, then add it to the sour cream. Add a pinch of salt to taste. Mix well.
Step 4
Coat each piece of fish with the sour cream sauce. Grease a baking dish with a little vegetable oil or line it with parchment paper. Place the red fish in a single layer.
Step 5
Wash and dry the tomatoes. Slice them into thin circles and lay them on top of the fish.
Step 6
Sprinkle with grated hard cheese. Adjust the amount of cheese to your taste.
Step 7
Place the baking dish in a preheated oven. Bake with top-and-bottom heat until ready. Temperature and time depend on your oven, but I baked at 220°C / 430°F for about 15-20 minutes. Don’t overbake, or the fish will become dry and tough.

Done! Serve the baked red fish in sour cream hot with fresh vegetables.
