Baked Pumpkin with Mushrooms

Preparation
Step 1
Cut the pumpkin in half and remove the seeds. Also peel off the skin. Rinse the mushrooms and pat them dry with paper towels.
Step 2
Peel the onion and garlic. Slice the pumpkin and mushrooms into thin slices, as shown in the photo.
Step 3
Prepare the dressing: pour vegetable oil into a small deep bowl. Add pressed garlic, a pinch of ground black pepper, and your favorite seasonings (I used thyme). Mix well. Slice the onion into thin slivers.
Step 4
In a large bowl, add the pumpkin, mushrooms, onion, and dressing. Salt to taste. Mix well so that every piece is coated with the aromatic dressing.
Step 5
Line a baking dish with parchment paper. Spread the vegetables evenly in a single layer.
Step 6
Cherry tomatoes go very well with all the ingredients. If you have them on hand, add them to the dish as well.
Step 7
Place the pumpkin and mushrooms in a preheated oven and bake for 30–40 minutes. Note: baking time and temperature may vary depending on your oven. I baked at 390°F (200°C) for about 30–35 minutes. This dish tastes great both hot and cold!
