Baked Pumpkin with Honey

Any oven-safe baking dish is suitable for this recipe. If you're using a silicone form, there's no need to grease it. However, for metal, ceramic, or glass dishes, it’s best to lightly grease with vegetable oil to prevent sticking.
Preparation
Step 1
You can use any variety of pumpkin. Depending on the sweetness of the pumpkin, you can adjust the amount of honey to taste. Honey can be replaced with sugar or vanilla sugar. The orange is optional.
Step 2
Wash and dry the orange thoroughly. Using a grater, remove a thin layer of zest, avoiding the bitter white layer. Then cut the orange in half and squeeze the juice from one half.
Step 3
In a bowl, mix the honey, vegetable oil, orange juice, and zest. Stir until smooth. If the honey has crystallized, melt it first and let it cool.

Remove the seeds and peel from the pumpkin. Cut it into medium-thin slices or large cubes if preferred.

Place the pumpkin slices into a bowl. Pour over the honey-orange marinade and mix well so all pieces are coated.

Lay the pumpkin in a single layer in a baking dish. Place it into a preheated oven at 180°C (350°F) and bake for 30-40 minutes or until soft. Baking time will vary based on the pumpkin variety and thickness of the slices.
Step 7
While the pumpkin is baking, lightly toast the sesame seeds in a dry skillet.

Transfer the baked pumpkin to a serving plate. Drizzle with the juices from the pan and sprinkle with toasted sesame seeds. Garnish with star anise and mint if desired. Enjoy your meal!
