Baked Potatoes with Mayonnaise and Tomatoes

Step 1
If the tomatoes are large, one may be enough.
Step 2
Peel and wash the onion. Slice into thin rings.
Step 3
Slice the peeled potatoes into rounds no thicker than 3/16 in (4-5 mm).
Step 4
Season the sliced potatoes with herbs and ground black pepper. Salt, drizzle with vegetable oil, and mix well. Use any herb mix and spices you like (I used dried basil and Provencal herbs).
Step 5
Lightly grease a baking dish with vegetable oil, then layer in the potato rounds.
Step 6
Evenly spread the onion rings on top of the potatoes.
Step 7
Drizzle mayonnaise over the potatoes and onions.
Step 8
Use juicy but firm tomatoes (not overripe) so they keep their shape when sliced - this also makes the dish look better when finished.
Step 9
Place the tomato slices over the mayonnaise. Bake in a preheated oven at 350°F (180°C) for about 40-45 minutes, until the potatoes are tender. The baking time may vary depending on oven type, thickness of the potato layer, and the baking dish used.

Grate hard cheese on a coarse grater.

Remove the dish from the oven and sprinkle evenly with grated cheese.

Return to the oven and bake until the cheese is melted.

Serve the baked potatoes with mayonnaise and tomatoes hot. Enjoy!
