Baked Potatoes with Broccoli

A fantastic side dish made from simple ingredients—finger-licking good! Baked potatoes with broccoli taste amazing thanks to the perfect combination of flavors. Serve it as a main dish for a family meal or as a complement to chicken or pork.

Preparation
Step 1
You can use fresh or frozen broccoli (this time, I used frozen florets). Choose any cheese you like.
Step 2
Wash the potatoes thoroughly with a brush. Place them in a pot and cover with cold water. Bring to a boil over high heat and add salt to taste. Reduce the heat and cook the potatoes until almost done—about 15-20 minutes. Drain the water, let the potatoes cool slightly, and peel them.
Step 3
In a separate pot, bring water to a boil, add a little salt, and place the broccoli florets in the boiling water. Once it starts boiling again, reduce the heat slightly and let the broccoli simmer for 3-4 minutes. Then, drain the broccoli and rinse it under cold running water.
Step 4
Cut the potatoes into medium-sized cubes or slices. You can cut them however you prefer.
Step 5
Add the broccoli florets to the potatoes.
Step 6
Wash the eggs. Crack two eggs into a deep bowl, add sour cream, and whisk until smooth.
Step 7
Grate the cheese using a coarse grater and mix it into the egg-sour cream mixture.
Step 8
Pour the egg-cheese mixture over the vegetables, then add smoked paprika, a pinch of salt, and ground black pepper. Mix everything gently.
Step 9
Transfer the vegetables to a greased baking dish of appropriate size. Bake in a preheated oven at 400°F (200°C) for 15-25 minutes. Baking time may vary depending on your oven.
Step 10
The baked potato, broccoli, and cheese casserole is ready! Serve hot with sour cream or other sauces. Enjoy!
