Baked potato with bacon

Preparation
Step 1
Preheat the oven to 200C.
Step 2
Rub the potatoes with olive oil, prick them all over with a fork, and set them on a small bed of sea salt on a baking tray. Bake on the top shelf of the oven for about an hour, or until the potatoes are tender and their skins are crisp. Remove from the oven and allow to cool until they’re easy to handle.
Step 3
While the potatoes bake, warm a frying pan over medium heat. Melt the butter, then add the chopped shallot and garlic. Cook for 2-3 minutes before adding the chopped leeks. Cook for another 2 minutes, then pour in the white wine and let it reduce by half. Stir in the cream and cook for 3-4 more minutes until the mixture thickens. Season with salt and black pepper to taste.
Step 4
Once the potatoes are cool enough, cut them into quarters and place them in an ovenproof dish. Pour the creamy leek sauce over the potatoes and nestle in the pieces of cheese.
Step 5
In a separate hot frying pan, cook the bacon until golden and crisp. Roughly chop the cooked bacon and scatter it over the cheese and sauce.
Step 6
Bake the entire dish in the oven for 10 minutes, or until everything is golden, bubbling, and irresistibly rich. Serve hot.
